What better way to start the dessert buffet off than with these bad boys. Perfect for all those sweet festive taste buds… but plot twist, without the guilt! Enjoy my loves…

YOU WILL NEED:
FOR THE BASE
  • 1 Cup of soaked pitted dates
  • 1 cup of walnuts
  • 1/4 cup of almonds
FOR THE FILLING
  • 2 cups cashews
  • 2 Tbsp coconut oil
  • 1 1/2 cup of cherries
  • Optional: 1/4 cup of maple syrup

Drizzle with dark chocolate

METHOD

  • Pre soak cashews for 4-8 hours in till they become soft.

Make the base by combining ingredients in a food processor/ blender. Should form a sticky dough.

Line your cup cake moulds/cake tin well.

Press base mixture into mould and pop into freezer in till firm

For your filling combine soaked cashews with coconut oil, cherries and mint leaves in a food processor/ blender. Mix for about two minutes into creamy constancy is formed.

Pour evenly into moulds and freeze for 5-10 hours.

Drizzle with dark chocolate and there you have it!

Remove from the freezer 10 minutes before enjoying.
