My Fluffy Brownies (NOT VG)

Hmm a yummy dense brownie with a warm cup of tea or coffee? YES PLEASE SIGN ME UP!.. “Oh wait, I’m trying to be good" 🙁 NOPE, Kath has got you covered!!

Incoming my Fluffy Brownie recipe. Unfortunately this recipe is not vegan 🙁 - I’m working on perfecting a fluffy brownie without the eggs for all my vegan kiddies BUT this recipe is diary, gluten and refine sugar-free.

YOU WIL NEED

  • 3 whole eggs
  • 1 cup of buckwheat flour
  • 1 cup of cacao powder
  • 1 cup of maple syrup/rice malt syrup
  • 1/2 of almond/coconut milk
  • Pinch of baking powder
  • Pinch of salt

METHOD

Preheat oven to 190 degrees Celsius.

Crack eggs into a mixing bowl. using an electric beater, beat for 2 minutes.

Once eggs are fluffy add in your buckwheat flour, cacao powder, almond milk , maple/rice malt syrup, salt and baking soda. Beat again. 

Taste test too see if sweetness is to your liking. Nope? Add more syrup Or 1/2 cup of soaked mashed dates. 

Pour into a lined baking tin and cook for 25 minutes.

Leave to cool for 10, cut into brownies slices and get ready for the time of your life! 

Optional.. 

Icing 

YOU WILL NEED: 

  • 1/2 cup of vegan chocolate 

METHOD 

Melt and leave too cool. 

Pour on top of brownies and leave to set in fridge.
