Almond Nut Butter Cookies

Cheeky mid- week recipe... yes please! These cookies are the perfect tea time snack. Packed full of not only flavour but nutrients they really do pack a punch.  They are also gluten free and vegan. Suitable for all but don't be fooled they taste like the real deal.

YOU WILL NEED:
  • 2 cups of almond meal
  • 1/3 cup of nut butter
  • 1/2 cup of rice- malt syrup
  • 2 heap tbs of coconut oil
METHOD

Preheat oven to 190 degrees celsius.

If you are making your own almond meal. Ground raw almonds in a food processor/blender in till flour consistency is formed.

Place almond meal into a mixing bowl.

Place small pot on stove at a medium heat. Put coconut oil in and wait for it to melt.

Once melted scoop nut butter inside and stir. After roughly 1 minute pour in your rice malt syrup and stir. As soon as you see bubbles quickly pour into mixing bowl and combine.

Using your hands mould mixture into cookies and place on lined baking tray.

Bake for  15 minutes. Take out of leave to cool for 10 minutes.
