Raspberry Chia Jam & a Healthy English Muffin

Who doesn't love a good old sugary jam spread over their toast… or in this case an english muffin!

If your answer is "ME" but your trying to curb the nasties and preservatives that come along with it, Kath is here to help with this quick, HEALTHY and not to mention DELICIOUS jam and muffin recipe! 

SOME HEALTH BENEFITS TO THIS RECIPE: 
  • Red Raspberries contain strong antioxidants such asVitamin C, quercetin and gallic acid
  • Chia seeds are rich in nutrients and fiber. They are an excellent source of omega-3 fatty acids.
  • oats contain manganese, selenium, phosphorus, fiber, magnesium, and zinc.

YOU WILL NEED:

For the jam..

  • 1 cup of raspberries (can also be frozen)
  • 2 tbs of chia seeds
  • 2 tbs of rice malt syrup
METHOD

In a mixing bowl mash your raspberries- if you are using frozen soften them first by leaving them out for a little or microwaving.

Add in your chia seeds and rice malt syrup. Combine well and leave to set.

After a few minutes the chia seeds will have absorbed the liquid and your chia jam will have taken shape.

Store in fridge.

YOU WILL NEED

For your microwave english muffins.. 

  • Chia seeds
  • Rolled oats
  • Pinch of salt
  • teaspoon of baking powder
  • 1/4 cup of apple pure
METHOD

In a food processor/blender ground your rolled oats down into a flour.

Now add in your chia seeds and combined.

Pour apple pure into the mix along with a small dash of water. Combine

Using a mug, place mixture inside just over half way (this all depends on the size of your mug, you should know rations by looking at it).

Pop into microwave for 2 minutes. Leave to cool for 5 in the fridge.

Cut in half and spread your beautifully sweet chia jam all over!!

    Do you know if I can sub the apple purée for mashed banana instead ? I think Iv heard that it can sub it but I’m not sure if it would actually turn out ??:)
