Kath’s Breakie Bowl

Who else is obsessed with a good old break bowl when they go out to eat. Honestly every time I go to a cafe or restaurant its the first thing I look for on the menu. Throughout my many breakfast excision I realise there are a few main factors that make up a great breakfast bowl SO I created my own to share. 

Change it up to your own taste buds and get creative with the flavours you like!

YOU WILL NEED:
  • 1 cup of quinoa
  • Handful of kale and spinach   
  • 1/2 sweet potato
  • 1 carrot
  • 1 zucchini
  • 1 egg
  • 1/2 avocado
  • 2 tbs of mustard
  • chilli flakes
  • 1 tbs of turmeric
  • coconut oil
METHOD

Cook quinoa.

Chop your sweet potato into cubs. Place a pan on medium heat and wait for it to warm up. Place 1 teaspoon of coconut oil into the pan along with your sweet potato. Keep tossing potatoes around in till they are brown and well cooked. Place into a side bowl.

Once potatoes have come out of the pan place it back on heat and add another tea spoon of coconut oil. Now chuck in your greens with a bit of salt and turmeric. Sauté well. Take off heat and leave to side.

While you wait for your water to heat up on stove to poach your egg we are going to grate the carrot and zucchini. Using a peeler simply peel the veggies into strips. I like to use a Julian peeler for different shapes! Leave in bowl to side.

Poach your egg by boiling water with 1 tbs of vinegar. Crack your free range egg into side bowl and slowly pour into pot. You’ll see your egg begin to cook immediately – don’t worry if the edges look a little scruffy. A really soft poached egg should take around 2 minutes and a soft-to-firm one will need 4 minutes. To check if it’s done, carefully remove your egg from the pan with a slotted spoon and give it a gentle prod with a teaspoon. If it feels too soft (use your instincts), put it back in the pan and give it a minute or so more to firm up.

In a small mixing dish  add in 2 tbs of mustard, chilli flakes, salt and 2 tbs of boiling water. Wisk and pour over vegetables.

Now all you have to do is assembly everything into the bowl along with your avocado and try make it look as good as the real deal haha (I never can lol). Tuck in and enjoy!
