Raw Cherry ripe Sandwich and a cherry nut free raw slice

I think it is finally clear to you all that Kath has a sweet ass tooth! My favourite recipes to create are always dessert based. Lucky for you guys their mostly plant based and always refined sugar free! Full of amazing nutrients, health benefits whilst still packing a punch in flavour. This time round I have not only created one but TWO treats that will defiantly satisfy my fellow little sweet tooths- minus the guilt hehe.  Enjoy beauties x

YOU WILL NEED:
  • 1 Cup of frozen
  • 1 Banana
  • 1/4 Cup coconut cream
  • 2 Cups of pitted dates (soaked)
  • 1 Cup rolled oats
METHOD

Filling/ice cream: 

  • Blizts the cherries, banana and coconut cream in a high speed blender. You may need to stop and start machine throughout the process as we want it to be thick therefore the less liquid the better (its okay to add some water to get it going a little). 
  •  Pop into a lined container and leave in freezer to set.

Sandwich: 

  • Place your pitted dates into a bowl, pour boiling water over them. Let them sit for 5 minutes, then strain.
  •  Mash dates with a folk and hands in till sticky mixture is formed.
  • Pour your rolled oats into the mix and massage with hands.
  • Roll out mixture onto a board and using a circle shaped stencil (I just use a measuring or normal cup) cut mixture into cookies.
  • Take your vegan ice cream out of freezer. Scoop onto a cookie and then place another on top- Make the sandwiches!
  • Pop back into freezer to set once all sandwiches are made.

 

Now try not to eat them all at once 🙂

RAW NUT-FREE SLICE:
YOU WILL NEED:
  • 2 Cups of pitted dates (soaked)
  • 1 cup of rolled oats
  • 1 cup of tahini (I used black but the choice is up to you!)
  • 1/4 maple syrup – more if you have a sweet tooth.
  • 1 1/2 tbs of cacao/coco powder
METHOD

Base:

  • Pour boiling water over pitted dates and leave for 5 minutes.
  • Strain and place into a bowl along with the oats. Then using your hands massage ingredients together in till combined and sticky.
  • Line a container with stick proof paper. Put sticky mixture into container and press down to the bottom using your hands or spoon. Leave in freezer while you make the top layer.

Top layer: 

  • Place tahini, maple syrup and cacao into a bowl. Stir together well.
  • Pour mixture on top of base layer- If you wanna add toppings such as coconut, granola, dried fruit ect now is the time to do so while it isn’t dry.
  • Freeze for 3 hours.
