My Chickpea Salad

This salad is so incredibility easy to make!! No cooking involved and honestly takes about 10 minutes. 

Chickpeas are a great source of protein especially for my vegan and vegetarians, one-half cup of cooked chickpeas has barely any fat, yet provides 7 grams of protein and 22 grams of energy-providing complex carbohydrates. Chickpeas are a insoluble fiber, which is great for digestive health. 

Because of this I have given you this amazing salad recipe all to get in and amongst. Pop it on the table next time at dinner, I promise everyone will love you for it!

  • Half a cucumber
  • Half of a red onion
  • One tomato
  • Half of a avocado
  • Two tbs of olive oil
  • Lemon juice
  • Pinch of pink salt

Finely chop your cucumber, red onion and tomato. Drain and rinse chickpeas then place all ingredients into a mixing bowl including your avocado.

Combined well- I like to use my hands hah.  

Now dress with your olive oil, lemon juice and salt. Stir through and tastes you go- you can change the rations depending on your pallet.

There you have it, its that simply! Perfect as a side or as a light but satisfying meal.
