My Choc Banana Pancakes
Come on who doesn't love pancakes?! Even if your answer is "me" i'm sure these bad boys will change your mind. This pancake recipe is my favourite when I have a massive sweet craving and want something quite dense (sometimes ill have them for dessert instead of breakie hehe). This stack will not only curb the sweet craving but it also has many added health benefits! Cacao has one of the highest antioxidant value of all the natural foods in the world. Antioxidants help in preventing diseases and overall general health. Bananas are seriously one of my favourite foods! Not only are they delicious but they also hold a great amount of potassium and magnesium. Your getting in some sweet protein from the eggs and a good hit of healthy carbs from your oats- oats also hold a nice sum of fibre, fibre is great in getting everything moving (if ya know what i mean). YOU WILL NEED:
- 1 whole ripe banana
- 1 tbs cacao powder
- 2 egg whites
- 1/2 rolled oats
FOR THE SAUCE:
- 2 tbs of tahini
- 2 tbs of maple syrup (you can use honey or rice malt syrup as well)
Place your banana, oats, egg whites and cacao powder along with a dash of water or any non dairy milk (go slow! You can always add in but you can’t take out hah) into a high speed blender and pulse in till pancake mixture is formed.
Place a pan on medium heat with a small amount of coconut oil inside. Once your pan is hot enough, pour some of the batter inside and flip once you see bubbles form on the top. You should be able to get 3 well sized pancakes out of it!
Once your pancakes are made, let them cool and make your sauce. Real simple! Just put your tahini and maple syrup into a bowl and stir together well, ta daa!
I like to spread my sauce in between each pancake and then top with fresh fruit.
